March is National Nutrition Month®, a great time to take a fresh look at what nourishes us, from the foods on our plates to the systems that bring them there. For a while, it felt like protein ruled everything. And yes, protein still matters. But if 2025 was about protein power, 2026 might just be the year of fiber — with growing attention to gut health, whole foods, and the overlooked nutrients that quietly do the heavy lifting for our bodies.

Here we dig into the science, systems, and stories shaping how we eat today— and tomorrow. From turning food waste into animal feed and building a more circular food system, to unpacking the truth about ultra-processed foods, to rediscovering fiber’s full-body benefits, to understanding why food prices still feel so high — these pieces connect what happens in fields, labs, grocery aisles, and kitchen tables.

Together, they reflect a One Health perspective — an integrated approach that recognizes the deep connections between the health of people, animals, plants, and the environment. What we grow, how we produce food, what we choose to eat, and how systems are structured all have ripple effects across ecosystems and communities. Seeing those connections more clearly helps us make smarter, more sustainable decisions that benefit both human health and the planet.

Because nutrition isn’t just about what you eat. It’s about how food is grown, made, valued — and who has access to it.
