New CFANS course connects food and culture

Food Science and Nutrition Department Head Job Ubbink, PhD, has traveled to places like Switzerland, Brazil, Russia, the United Kingdom and across the United States to study food science. His travel experiences and his passion for how food connects people sparked his vision for a new course called “Food Customs & Culture” in CFANS.

U of M Twin Cities students are quoted. Francine Overcash, a postdoctoral associate in CFANS, and Craig Hassel, an associate professor in CFANS and Extension nutritionist, are mentioned.
